RECEITA DE SHAKSHUKA

SHAKSHUKA 

Shakshuka

Shakshuka é uma espécie de ratatouille, normalmente coberta com ovos inteiros cozidos no próprio molho (ou batidos), muitas vezes considerada o prato nacional da Argélia, que migrou para diversos países como Palestina, Egito, Israel, e depois para Europa. 
Alguns povos fizeram desta iguaria um prato muito popular para o café da manhã. 




Os ingredientes principais são tomate, cebola e pimentão fritos em azeite, mas existem variações, algumas regionais, que utilizam muitos outros ingredientes, principalmente os vegetais, como batata, beringela, azeitona entre outros. 

Uma receita aconselha a aquecer óleo com páprica até o corar e juntar cebola e alho até a cebola ficar cozida, mas sem mudar de cor; acrescentar tomate e mexer, mas sem o deixar cozer, depois o pimentão, água, sal e pimenta e deixar cozer em fogo brando em recipiente tapado. 
Fazer “ninhos” na mistura para depositar neles ovos inteiros para ficarem escalfados (cozidos rapidamente em água ou molho muito quente). Pode ser servido com pão ou arroz bronco.

Algumas variações incluem cominhos fritos no óleo, antes de adicionar a páprica, ou coentro moído, junto com a cebola. 

Há versões onde camarão fresco, merguez (uma salsicha típica da Argélia) ou azeitonas e alcaparras são adicionados ao molho, antes ou em vez dos ovos ou até mesmo juntos, o que aumenta seu teor proteico. 

Em termos de vegetais, pode juntar-se beringela ou batata em pequenos pedaços, quando se estiver cozinhando o pimentão. No final, pode ser servido com atum.

A mais simples receita de Shakshuka, que é por definição ovos cozidos em molho de tomate, é uma comida de rua que fica na lista das comidas mais populares pelo seu sabor. 

Para fazer Shakshuka só precisamos de: ovos, tomates, cebola e sal. Só isso. 

A receita é fácil, sim, entretanto, leve com você paciência, porque como todos sabemos, quanto mais paciência, melhor a comida.

INGREDIENTES

4 Ovos.

4 Tomates grandes e maduros, picados em pedaços de 2-3 cm.

1 Cebola grande picada.

1 Pimentão vermelho meio grande picado (senão tem, pode usar o pimentão verde)

3 dentes de Alho amassados.

0,5 a 1,0 copo de Salsa picada (opcional)

Sal, Cominho e Pimenta: a gosto.



MODO DE FAZER

Em uma frigideira, frite a Cebola, no fogo alto, até ela começar a ficar transparente.

Adicione o pimentão na frigideira e continue fritando por mais 5 minutos, até ele começar de pegar cor.

Adicione o alho, mexa ele com a cebola, e deixe tudo na frigideira, até ficarem na cor marrom claro. “Grelhado”.

Adicione os tomates, mexa bem, mantenha em alta temperatura até borbulhar.

Adicione os temperos e a salsa.

Baixe o fogo e deixe por 20-30 minutos, para virar uma textura mais homogênea. Tampe a frigideira. Se não tiver uma tampa, pode usar uma forma ou bandeja que você tenha em casa.

Faça buracos (ninhos) no molho, para colocar os ovos dentro. Coloque cada ovo dentro desse “Ninho”.
Dê uma olhada a cada 1-2 minutos, até que os ovos fiquem cozidos (4-5 min gema mole).

Tire do fogo, coloque no prato, e sirva com pão branco ou arroz.

SMYRNA

CIDADE DE SMYRNA 










Smyrna Agora was founded in late 4th Century BC, immediately after the reign of Alexander the Great of Macedonia. Nestled in modern-day İzmir’s historic city center’s core, it is one of the largest agoras in the world that witnessed the Roman Empire.

According to Pausanias, “Alexander, the son of Philippos, founded the present city after a dream. Rumour has it he was hunting atop Pagos Hill. On his return from the hunt, he arrived at temple of the Nemesis, and decided to take a nap under a tree that had grown out of the spring in front of it. Nemesis came in a dream and commanded him to build a city here, and relocate the people of Smyrna there.” He then adds, The Smyrnians sent envoys to Claros (Apollo) to learn what he thought about the situation. This time, God answered, “Those to dwell in Pagos beyond the sacred Meles shall be happy beyond their wildest dreams.”

Smyrna Agora located in the heart of historical city center of İzmir, Smyrna Agora is one of the world’s largest of its kind. Excavation work on the site first began in 1933. In 2007, Assoc. Prof. Akın Ersoy (of İzmir Katip Çelebi University) and his team of archaeologists revisited the Agora and have remained there ever since – with permission of the Republic of Türkiye Ministry of Culture and Tourism. So far, they have uncovered a west portico, a basilica, a Bouleuterion, a mosaic hall, a roman bath, and a building from the Ottoman era that surrounds its courtyard.

It was founded at the end of the 4th Century BC immediately following the reign of Alexander the Great. It served as Smyrna’s administrative, political, and judicial centre, as well as main hub of commerce and trade. Surrounded by porticos, it used to contain monuments meant for important occasions and agreements, altars for pagan religious ceremonies, statues honouring prominent local figures, exedras with marble seat, and both a temple and altar for the city’s patron deity.

A major earthquake destroyed the Agora in 178 AD. Shortly thereafter, Roman emperor Marcus Aurelius set about rebuilding it. Nearly all surviving remains belong to that second period. Its overall character only remained intact until 7th Century. Over time, it began to lose its lustre as Smyrna shrank. Its courtyard moreover ended up being used as cemetery during Middle and Late Byzantine alongside Ottoman Empires. Ottomans moreover converted any surrounding buildings into dwellings, a tradition that would last until the end of 20th Century.

Smyrna/İzmir has remained a major Mediterranean port city since antiquity. In Ottoman times, Agora and its environs played host to a bustling commercial life, as well as dozens of different ethnic and faith communities scattered across several neighborhoods.
