SOPA DE LENTILHA CÍTRICA

Citrusy Lentil and 
Sweet Potato Soup

Citrusy lentil and sweet potato soup (NYT)



INGREDIENTS

Yield:4 servings

¼ cup extra-virgin olive oil
4 scallions, thinly sliced
4 garlic cloves, coarsely chopped
1 teaspoon ground cumin or coriander (or a mix)
1 bay leaf, thyme or oregano sprig (optional only if you have them)
Kosher salt (such as Diamond Crystal)
1 jalapeño, halved lengthwise, seeds removed if desired
1 medium sweet potato (8 to 10 ounces), peeled and cut into ½-inch pieces
1 cup green lentils
1 medium bunch chard (8 to 10 ounces)
¼ cup lemon or lime juice (from 2 lemons or limes).


PREPARATION

Step 1
In a large Dutch oven or pot, combine the oil, scallions, garlic, cumin, bay leaf (if using), a pinch of salt and one jalapeño half. Set over medium heat and cook, stirring constantly, until scallions are softened and fragrant but not browned, 2 to 4 minutes.


Step 2
Add 5 cups of water, the sweet potato, lentils and 1½ teaspoons salt. Bring to a simmer over medium-high, then reduce heat to low, cover and simmer for 10 minutes.


Step 3
Meanwhile, thinly slice the chard stems all the way to the leaves. Place the stems in a small bowl; add the lemon juice and season with salt. Thinly slice the remaining jalapeño and add to the chard stems to taste. (If you don’t want your soup too spicy, just add a few slices, or leave them out entirely.) Coarsely chop the chard leaves.


Step 4
After the lentils have been simmering for 10 minutes, taste the broth. If flavors are muted, add more salt. If the broth tastes spicy to you at this stage, remove the jalapeño. Add the chard leaves, stir to combine, then cover and cook until the lentils and sweet potato are tender, 8 to 12 minutes. Remove from heat and thin with water if necessary. Remove and discard the bay leaf plus the jalapeño half (if you haven’t already done so).


Step 5
Divide soup among bowls. Top bowls with a spoonful of the chard stems, jalapeño and lemon juice. For a more bracing soup, add another spoonful or two. Soup and topping will keep separately for up to 3 days in the refrigerator. Warm the soup, add water and salt as needed, then combine with the citrusy chard stems.



INGREDIENTES

1 folha de louro, raminho de tomilho ou orégano (opcional - somente se você tiver) 
Sal Kosher (como Diamond Crystal) 
1 jalapeño, cortado ao meio no sentido do comprimento, sementes removidas se desejar 
1 batata-doce média (8 a 10 onças), descascada e cortada em pedaços de ½ polegada 
1 xícara de lentilhas verdes 
1 cacho médio de acelga (8 a 10 onças) 
¼ xícara de suco de limão ou lima (de 2 limões ou limas).


PREPARO

Passo ou etapa 1
Em um grande forno ou panela holandêsa, misture o azeite, a cebolinha, o alho, o cominho, o louro (se for usar), uma pitada de sal e metade de uma jalapeño. Leve ao fogo médio e cozinhe, mexendo sempre, até que a cebolinha esteja macia e perfumada, mas não dourada, 2 a 4 minutos.

Passo 2
Adicione 5 xícaras de água, a batata-doce, as lentilhas e 1½ colher de chá de sal. Deixe ferver em fogo médio-alto, reduza o fogo para baixo, tampe e cozinhe por 10 minutos.

Passo 3
Enquanto isso, corte em fatias finas os caules da acelga até as folhas. Coloque os talos em uma tigela pequena; adicione o suco de limão e tempere com sal. Corte em fatias finas o jalapeño restante e adicione aos talos de acelga a gosto. (Se você não quiser que a sopa fique muito picante, basta adicionar algumas fatias ou deixá-las totalmente de fora.) Pique grosseiramente as folhas de acelga.

Passou 4
Depois que as lentilhas estiverem fervendo por 10 minutos, experimente o caldo. Se os sabores estiverem suaves, adicione mais sal. Se o caldo estiver picante para você nesta fase, retire o jalapeño. Adicione as folhas de acelga, misture bem, tampe e cozinhe até que as lentilhas e a batata-doce estejam macias, 8 a 12 minutos. Retire do fogo e dilua com água, se necessário. Retire e descarte a folha de louro mais a metade do jalapeño (se ainda não o fez).

Passo 5
Divida a sopa entre tigelas. Cubra as tigelas com uma colher de talos de acelga, jalapeño e suco de limão. Para uma sopa mais revigorante, adicione mais uma ou duas colheres de talos de acelga, jalapeño e suco de limão. A sopa e a cobertura podem ser guardadas separadamente por até 3 dias na geladeira. Aqueça a sopa, adicione água e sal conforme necessário e misture com os caules cítricos da acelga.
